Save a version whenever you reach a good stopping point; it takes a note and a click. From the in-Krita panel, it can even save your open paintings for you the moment you click in, so a save is never more than a few minutes stale.
If something still goes wrong, going back takes a few clicks.
Open History and pick the version from right before things went wrong. Restore brings it back as a brand-new save, and nothing in between is ever deleted, so you can always change your mind again.
